Tourist information in Epernay and Reims can advise of wineries in the countryside and arrange tours. At both tourist information offices you can get the small booklet (you have to ask for it) called “Les Rendez-vous Privilegies” from the independent wine producers and this holds all the information you need to visit some small producers.  It shows when each of them is holding an open weekend and which are open for "walk in" tastings.
